Hygienically, the unit meets the requirements of EN 1672-2: all surfaces are fully accessible and free of hidden cavities. Daily cleaning uses warm water with a neutral detergent; weekly treatments with steam or HACCP-certified disinfectants ensure complete microbiological control. Professional maintenance every six months includes replacing seals, calibrating sensors, and checking the heating elements.
